The recession was a piece of cake by comparison. “You could at least do things to help, like organise a festival or try to attract wedding business.”
He is using his time to upskill. “Fifty Shades Greener, a sustainability consultancy, put out a free online course for the hospitality sector, so I’ve sent it out to all the staff,” said Minihane, whose hotel recently became Ireland’s first to be awarded carbon-neutral status.
