BOSTON — The COVID-19 outbreak has spurred Americans to take a closer look at their food supply chain.

The United States relies on a healthy agricultural marketplace, said Catherine Woteki, former undersecretary for the U.S. Department of Agriculture’s Research, Education, and Economics mission area.

Woteki was a speaker at a webinar hosted by The Forum at Harvard T.H. Chan School of Public Health.

Food stocks and crop yields in the U.S. look promising, she said.

The dilemma is how to get fresh, healthy foods to food insecure families in a timely manner.

“Out of all of this, I think what’s coming is some recognition in the U.S., as well as globally, that we need to be building a much more resilient food system,” Woteki said.

“We need to build a food system that’s health promoting, both for people and the environment. We have a lot of opportunities with legislation to actually make those changes.”
