If diners aren’t dining, cooks aren’t cooking, and they’re also not ordering as much from their produce and protein suppliers.
The Association of Genuine Alaska Pollock Producers represents a very specific link of that endangered food supply chain — the suppliers of the mild white fish that is a staple on many menus. To draw attention to their plight, the GAPP has donated product to six local restaurants to create a special menu item prepared with their individual culinary styles. Through Nov. 19, diners can sample these dishes and get schooled about the delicious Alaskan fish.
